Lamb/Bacon Bites

These lamb and bacon bites are the absolute perfect appetizer for tailgating or ball games and family gatherings.  Quick and easy with ground lamb.  Make twice as many as you think you will need and you can thank me later.  For a simple meatball recipe this one is so good it could easily be a meal if you ate enough.  
The flavor of these are so good, you can take the same recipe and make lamb burgers with them and instead of wrapping with bacon, include real bacon bits in the ground mix when you make your patties!  
These also go great with a Tzatziki dipping sauce.  There are numerous flavor profiles on Tzatziki and you can even buy store bought now.  Here is one of my favorite recipes for Tzatziki sauce if you would like to make your own.

Ingredients

  • 1 lb West Fork Farms Ground Lamb
  • ½ each Onion chopped
  • ¼ cup Parsley
  • ¼ cup Panko bread crumbs
  • 1 each Egg
  • 2 each Garlic Cloves
  • ½ tsp Oregano
  • ½ tsp Basil
  • ½ tsp Salt
  • ½ tsp Black Pepper
  • 20 each Bacon Slices
  • 1 cup Your Favorite BBQ Sauce

Instructions

  • Preheat oven to 400 degrees
  • Combine all ingredients EXCEPT bacon & BBQ sauce in mixing bowl. Take a ice cube tray and lay the bacon across the tray and overlap 1/4" or so all the way down the length of tray. Put meat mixture down in the indention for cubes. Then take the bacon and cross back over the top of meat mixture.
  • Turn over onto a cooking sheet. Bake at 400 degrees for 20 minutes. Remove and brush on BBQ Sauce, and back to oven for 10 more minutes.
